Today I will start with a tip on baking.
Have you ever made muffins or cakes and had them come out of the oven either too flat or looking like mini mountains? Here is a hint on how to diagnose and solve that problem.
Each oven cooks differently. You have to know your oven to have consistent baking results. If muffins/cakes are too flat, often your oven is too low. Increase the temperature by 25 degrees until you get the desired result.
If your baked goods are peaked, your oven is too high. Reduce the temperature by 25 degrees until you have nicely mounded tops.
Other problems with the rising of your baked goods could be from the ingredients themselves. Check the date on your baking powder or cream of tarter to see if they are expired. Expired products may not give the desired raising effect. If your baked goods are too heavy as well as flat, another problem could be that you are using too much flour or not enough leavening, such as eggs and the above mentioned baking powder.
